What are the most Ethnically diverse cities in North Carolina?

My family (hispanics) are moving from Queens NY to North Carolina. We are not familiar with the cities/areas in NC. Can someone enlighten us on what are the more ethnically diverse areas in North Carolina (no/low crime zone and good school systems). We are used to the faster NY life (movies, dining, shopping, etc) and would like an area similar (not country like). Any suggestions would be greatly appreciated!! Thank you.

Probably the most ethnically diverse area in NC is the Triangle area (made up of Raleigh, Cary, Durham, and Chapel Hill). It's a fast-growth region with a good bit to do and that's fairly diverse due to three major universities in the immediate area (NC State, UNC, and Duke) as well as the Research Triangle Park and the companies associated with it. I've seen members of just about every ethnicity in the time I've lived here and, if restaurants are any indication, you can get just about anything from Argentinian to Vietnamese to French to Eastern European to Ethiopian.

Charlotte would probably also be a good bet, but having only visited there, it doesn't seem as ethnically diverse as the Triangle is.
